INGREDIENTS
¼ cup oil
¾ cup mix coloured pepper chopped into small pieces
¾ cup red onion, chopped into small pieces
250g paneer cubes
1 tsp Supreme Garlic Ginger Paste
2 tbsp Supreme Tandoori Masala Powder
1 tbsp Supreme Kashmiri Chilli Powder
1 tsp Supreme Garam Masala Powder
1 tsp Supreme Chilli Powder
2 tbsp tomato paste
⅓ cup ketchup
Salt to taste
4 pitta bread
Grated mozzarella cheese
Pinch of oregano
METHOD
Heat the oil over medium heat, add paneer and fry until the edges turn golden. Add ginger garlic paste, tomato paste, tandoori powder, Kashmiri chilli powder, garam masala powder, chilli powder and salt to taste. Stir well and cook for 3-4 minutes, then add onions and peppers. Turn the heat down to low and cook until onions and peppers soften slightly. Lastly, stir in ketchup, cook for 3-4 minutes then remove from heat and let it cool slightly. Preheat the oven at 180°c. Place the pitta bread on a baking tray and top with a handful of grated mozzarella. Then spoon over some of the paneer mixture on top of the cheese. Sprinkle over a little more mozzarella and lastly a pinch of oregano. Bake in the pre-heated oven for 20-22 minutes or until the pita is slightly crisp and the cheese has melted.
