Dahi Phulki are very refreshing, you can prepare in no-time – it’s comfort food, can be eaten at any time with Rice, Rotis or parathas also.

Ingredients

  1. 1 cup besan
  2. pinch hing
  3. 1 tsp crushed cumin seeds
  4. 1 tsp crushed coriander seeds
  5. 1/2 tsp red chilli powder
  6. 1/2 tsp garam masala
  7. 1/4 tsp turmeric powder
  8. 1/2 tsp chaat masala
  9. to taste salt
  10. 1/4 tsp soda bicarbonate
  11. as needed water
  12. 1/2 tsp kasuri methi
  13. as needed some carrom seeds
  14. 2 bowl yogurt
  15. as needed salt
  16. 1/2 tsp jeera powder
  17. 1/2 tsp chilli powder
  18. as needed some coriander leaves
  19. as needed some whole red chilli
  20. 1 tsp cumin seeds
  21. as needed few curry leaves
  22. oil for frying and baghar

Method

Take 1 cup of Besan in a bowl. Put cumin seeds crushed, crushed coriander seeds and a little bit of hing. Put red chilli powder, Garam masala, turmeric, chat masala powder. Add salt as per your taste. Put 1/4 tsp soda bicarb and mix well. Add a little water and make a smooth paste and add little carrom seeds and kasuri methi. Heat the oil in kadhai/ wok and drop 1 teaspoon batter into hot oil. Deep fry balls till light golden brown in color and take it out from the oil.

Boil 6 cup water in a pan and add 1/2 teaspoon salt. Drop 8-10 balls at a time in hot water and take it out from the hot water after 30 seconds.

Take some yoghurt whisk with some water and make it thin. Put a little salt, Jeera powder and chilli powder add to the curd. Then add soaked Phulki in dahi and let them rest for 5 min.

Make baghar with Jeera, kadi patta and dried red chilli Transfer in serving bowl and put baghar.

Top with some red chilli powder and cumin powder. Enjoy
